I'm a vegetarian, and this dish is great. It's large and the tortilla is satisfyingly pan fried so that it's a got a little crunch to it. It's got all the normal fajita veggies inside of it, and cheese and whatever other secret ingredients give this quesadilla by far the best taste I've ever had.
At one point I thought there was little bits of meat in it, but it was minced up mushrooms.
Best veggie quesadilla I've ever had.
