The moment I tasted Delfina's basil-dressed pasta, I remembered my very first taste of pesto sauce. I was 23 and my taste buds tingled as I marveled that I had lived way too long without ever experiencing anything else quite so delicious.
Defina’s pesto is rich with the highest quality olive oil. There is little cheese to distract from the sublime melding of basil, pine nuts and garlic pounded into a smooth paste. The sheets of homemade Fazzoletti-style pasta are silky and pair surprisingly well with chunks of powdery boiled potato and snappy green beans.
This is one of those very special dishes that you remember for years to come.
