This hot and crunchy ruby trout is served with shrimp and avocado atop a mango jalapeño aioli. It's topped with ancho sauce, and served next to roasted garlic red pepper flan.
Hudson's has been my wife's and my anniversary spot for the past 20 years...both the restaurant and my marriage just keep getting better!
I'm with Chef Prambs! I love this Hudson's on the Bend signature dish. It's the kind of dish I'd never try to make at home (far too complicated, and time consuming).
The attention to detail is marvelous. I love the silky texture of the roasted garlic red pepper flan next to the crunchy ruby trout, and the shrimp and avocado add a delicious dimension.
If you look closely at the photo, you'll notice a flower, nestled between the trout and the fresh rosemary. Hudson's adds edible flowers to almost all of their dishes. Beautiful and delectable; what's not to like? :)
