Inspired by Kblood's wonderful description of her cheese board experience at Daniel's in Vegas, (http://www.dishola.com/dishes/view/1939) I had to share one of my more memorable cheese course experiences - this one at Spago in L.A.
Like Kblood, I can't remember all of the exact names of the cheeses, but I do know there was some excellent diversity, including hard and soft cheeses, goat, cow, and sheep's milk cheeses, and both stinky and mild cheeses.
Part of the fun at Spago is that they roll a table-height cart right up to your table, and tell you to pick your favorites. I felt a little obnoxious, since I pointed to almost every cheese on the tray (I wanted to try all of them!) but when you see how thin they slice each taste, you won't feel like such a pig. :)
Only downside, is that unlike at Daniel, Spago does not serve any cheese pairings such as fruit, nuts, or honeycomb. (They do offer a delicious basket of homemade bread and crackers throughout your meal and cheese course).
If you're a cheese purist, you'll be in heaven -- this cheese course is for you. If you delight in a morsel of Cypress Grove Humboldt Fog followed by a bite of a marconi almond or a taste of a Turkish fig, you may want to take a pass, and head straight to Spago's dessert menu.
