I'm no food critic... and I am not a connoisseur of french food... but... OH.... MON.... DIEU!!
Served in a cast iron cassoulet, this version of Coq au Vin is simply wonderful. The sauce is so thick and rich... and the owner told me that it has no thickener. The wine is reduced over and over and over again for several hours to reach this heavenly consistency and flavor, complimenting the perfectly cooked meat that melts in your mouth.
All this in a an understated, hip bistro in one of Seattle's coolest neighborhoods - Madrona. Favorite itinerary: Go for a walk on some of Madrona's back streets and see amazing city gardening; Have some appetizers and a drink at Bistro Turkuaz (2 blocks from Cremant); amble over to Cremant for a leisurely dinner.
