    I would eat this dish every single day of my life if I could. You have a choice here of three different fish for this dish. I would try the Tomoviche made with the Escolar first. Very clean dish, thinly sliced with Yuzu juice and a slight kick of the red chile pepper. Beautifully presented as all of Chef Steve Riad's dishes are.

    Yuzu if you are not familiar with it, is a lovely little citrus fruit that is used in Japanese cuisine. Yuzu is powerpacked with flavor and not at all like any other citrus.

    I have used fresh Yuzu for a deliciously different hollandaise. Add the rind when you do as there is precious little juice in the fruit. Fresh Yuzu is available in the spring and the fall at Asahi Japanese Grocery.
