
I was a little worried about the poached egg. Sadly, I'm not an egg fan (to which I attribute being force fed them when I was young - thanks, Mom), however, in this case, the egg was a stroke of genius.
This is your quintessential French "spring" salad, as the name indicates. Asparagus, favas, peas, radishes, and mixed greens comprise the base. That poached egg acts as the dressing, tying everything together.
Another important thing about this salad: everything was perfectly crisp. Those favas and asparagus tips, peas and radishes all had a beautiful crunch to them. They must have lightly, lightly steamed, or not cooked at all. Hm, veggies at their best. :)
