wow, i REALLY loved this roasted beet salad, and i've had my fair share... the roasted red and golden beets were dressed with quite an acidic vinaigrette, but were accompanied by creamy blue cheese, pickled crisp slices of shallots, and candied walnuts. The varying textures and flavors weren't as distracting as i'd thought they'd be, but instead made for an exciting roller coaster ride for my ever-grateful tongue...
