this is one of my last meal request foods, and bombay bistro makes it fairly well...
this version of chaat, which they'll actually make to order right in front of you, combines a fried potato cutlet, mildly spiced chickpeas, and papdi (think cereal-based trail mix offering) with chili powder, ground cumin, chopped cilantro, diced onions, diced tomatoes, boiled diced potatoes and the trinity of chutneys (green cilantro, sweet tamarind, and red chili). you can add yogurt in there too (to help calm the culminating spices), but i usually throw that out to appease my chilihead cravings.
yeah, sounds like a LOT, but the overall sensations of crunchy, tangy, spicy and barely sweet has me reeling back for more. i think it's currently only offered during the highly-priced weekend lunch buffet. but for an authentic indian dish this good in a town filled with mediocre indian restaurants, i'm willing to pay the price...
