Our friends in Seattle introduced us to Shanghai Garden (a restaurant some people consider to be the best Chinese in Seattle), and more important, to its signature dish: the hand-shaved noodles.
Ours arrived in a bright barley-green shade, and were peppered with egg, chicken, carrots and onions. But what most stood out about these noodles was how much they differ from their machine processed counterparts.
I learned that hand-shaved noodles are cut from a block of dough as they are cooked, and thus are much more flavorful, chewy and thick than the regular noodle.
Maybe Shanghai Garden will open an outpost in Austin, TX? Then we Austinites could all partake in hand-shaved green noodle mania. :)
