Aperto has put a favorite new dish of the summer into my repertoire. I'm decidedly not a fruit-soup kind of person, so I was pretty nervous I might not be a fruit-salad kind of person. The textures, temperature, and flavors here were incredible, not to mention the presentation. The light, fresh flavor of the olive oil and the tender, just-salty salata was killer. Both the red and yellow watermelon, seedless, blended seamlessly with perfectly prep'd cucumbers and the extra touch of roasted pistachios was great.
