I ordered this dessert because it sounded light and refreshing, and it was, but I had no idea how beautiful it would be. A neat mirepoix (as only the French can do) of local pineapple, mango, and apple, tossed in a very light fresh-vanilla bean syrup, topped with a tart scoop (sorry, I mean canelle, chef) of pineapple sorbet. Add a fresh coconut shell bowl (anchored in a snowy dusting of fresh coconut), a mint leaf garnish and I defy you to find a prettier tropical dessert.
