
Alright. I've known about this queso for as long as Torchy's has been open, when they were still slinging tacos around at Little Woodrow's on 6th. I thought that it only had appeal for me, because I love spice in my Tex-Mex, and the little dash of heat atop this queso is the perfect eye-opener...
But then I find, to my surprise, that everyone I know, once pushed to name the best queso in Austin...has redirected their hearts to Torchy's (from a well-deserving legend, the Magnolia Cafe "Mud"). Extremely simply presented, tempting to make you think it's poorly made (styrofoam cup?!? really?!?), and served with chips so fresh that a scant few might have a spot of grease amid their corn goodness...this queso is both subtle and yet extremely overt. Smooth but not watery, hearty but not overfilling...it sticks perfectly to chips and makes any day better. Yes, I said it. It's THAT good.
