(Critics) This is a truly great dish. Joseph and the gang at Yen Ching put together a Jap Chae that is sweet, and sufficiently oily to make the noodles separated, but not oily like gross Lo Mein or something. The mushrooms are standout and the pork is tender and bitesized.
