
This crepe is big and stuffed full of ooey-gooey ham and cheese. Think French burrito. The crêpe itself is thick enough to hold in all of the stuffing but tender enough to melt in your mouth with each bite. There is a good ratio of ham to cheese so the sweetness of the ham balances the tartness of the cheese, the mornay sauce brings it all together so each bite is smooth and creamy, and the green onions help cut through the richness of the filling for a bit of freshness in each bite.

On Saturday mornings you can get a breakfast ham and cheese crepe. The difference between this and the regular ham and cheese is the addition of a fried egg. It's a wonderful crepe and I highly recommend it. The sliced ham isn't fatty and is easily cut through with your teeth or a knife, the egg is hot and delicious, and the Gruyere cheese is perfectly melted and a fabulous match with the ham.
This silver airstream trailer serves up an inexpensive and satisfying taste of France. Love the rich and gooey and ham and cheese crepe, but the dessert variations are just as alluring.
