I love these 3-4 bite tostadas. They are a wonderful appetizer to enjoy and share with your table mates, particularly when you pair them with a cold Michelada, or a tart margarita on the rocks. The crunchy fried tortilla is topped with your choice of shredded chicken, avocado, or cochinita pibil. I always ask our server to substitute one extra cochinita pibil for the avocado (somewhat lacking in flavor compared to the other two options). Topped with a thin layer of black beans, shredded lettuce, tangy pickled onions, and julienned radishes, these towering tostadas offer you some of the best of Mexico - all in one bite.
