
When you think of beets, do you conjure up a picture of blood red disks the shape of hockey pucks? Or perhaps you see a pile of shredded red veggies with a dollop of sour cream splayed across the top? Well, divorce those thoughts from your brain, because when you order the candy cane beets at Lamberts, you receive a bowl brimming with pastels - pinks, whites, and yellows. And this beautiful picture tastes as good as it looks. How could it not, when the fresh beets are served with warm toast dripping with Cambozola cheese, shaved fennel, and chives. Everything coalesces thanks to a truffled Tupelo vinaigrette. Mum's the word on that vinaigrette, although I'd wager it has a touch of Mississippi honey in it. Forget the BBQ; pass the beets!
