This is some of the best queso in Austin, Texas - and that's saying a lot. We suspect the cheesy delight is made from a variety of real Mexican cheeses (as opposed to the Velveeta-type quesos served at some establishments), but it probably consists primarily of Chihuahua, since this chile con queso hails from the state of Chihuahua.
The cheese is interspersed with silky ribbons of roasted chile, and is dotted with chopped tomato, cilantro, and bits of crunchy tortilla chips on top.
If you like cheese...bueno, what can we say? Head to Fonda, and order their chile con queso. We dare you not to eat the whole bowl.
