Agreed! I tried Din Tai Fung in Shanghai, and their Xiaolongbao dumplings are just roll-your-eyes-back goooooddd... Very tender dumpling skin without the starchy aftertaste, very delicate yet bold broth with perfectly seasoned meat stuffing.
I don't usually like international chains, but this one is just exquisite.
Oh my god...what a feeling. I have never tasted dumpling like this. The impression lasted long after I ate the shumai. To begin describing it, let me start with the definition of shumai. It is a steamed ground pork dumpling with some vegetables on top like shredded carrots. The one that we ordered is the shrimp pork shumai. They put the shrimp on top of the shumai and the ground pork at the bottom. However, if you eat the shumai at Din Tai Fung, you are in for a little surprise. I took a bite of the shumai only to find there was a little explosion in my mouth. In addition to ground pork inside the shumai, the restaurant also add a little broth inside the shumai so that on the first bite, the water/broth inside the shumai explodes out of the shumai skin. The sensation is incredible. Furthermore, the taste of the shumai is excellent. Adding a little of vinegar, chili sauce and ginger makes this an excellent dish!!
