Maudie's makes some damn fine basic Tex-Mex. There's nothing fancy about it and that's what makes it good. I'm not sure who thought it would be a good idea to crack a couple eggs on top of some enchiladas, but I'd like to thank them. I like my eggs sunny-side up on this dish but you can get them cooked however you'd like. I recommend trying them a little runny. Pairs well with a Shiner and a hooker.

(Industry) These picadillo enchiladas topped with an over-easy egg and double rice are undoubtedly the best cure for a Saturday night hangover!
