
Halibut is lately one of my favorite fish to eat. Prepared well, it is very lightly flavored with a wonderful texture. Fresca's halibut is no exception, but the real star of this dish is the risotto cake hiding underneath the cooked-just-so garlic spinach. The crispy edges complement the perfectly al dente kernels and the creamy mushroom flavors, salted quite nicely, never fail to cause me to pause after the first bite.
A food of the gods, for sure.
