Chef Alma has perfected this dish over the years. My favorite rendition is when it is served with a riso nero croquette, confit cabbage, and pineapple and honey ginger glaze.

This is the most memorable oyster po-boy for me. There are so many to choose from in Louisiana - but you can't go wrong with Acme.

This is a great dish if you're looking for something a little different for brunch in Santa Fe. The chile relleno comes with fried eggs and beans. I also love the intimate, adobe, casita-like feel of the restaurant.

Maybe I'm partial; it is my restaurant, after all. But El Chile's "Downtown Charlie's Special" is one of my all-time favorite dishes. This combination of grilled shrimp and charbroiled beef or chicken fajitas is served on a sizzling skillet with frijoles a la charra, pico de gallo, and guacamole. Fresh tortillas on request. Ricissimo!
