This fragrant and exotic dish rocked my world! The sultry mingling of curry and fresh vanilla bean lightly perfumed the ultra-fresh fish. The seared mahi mahi is topped with a piece of caramelized banana--sounds strange but the sweetness worked beautifully with the sauce.The buttery mashed potatoes provided a rich, creamy base for all those flavors. I had no choice: I used my crusty baguette soak up every last drop of the fragrant butter sauce.

After swimming in the lagoon all morning, a gal can get hungry. Enter the perfect island lunch: Local sashimi-grade red tuna is lightly grilled (so it's perfectly rare and moist inside) and served with sweet, smoky caramelized spears of Moorea pineapple. A light vinaigrette of fruit juice and herbs pulls it all together. The sticky coconut rice served on the side is irresistible, and the final punctuation of island flavors. Add a glass of cold wine, sultry lounge music, and a scattering of swimsuit-clad tourists and you have, well, another day in paradise. This tuna is almost worth a plane ticket to Polynesia.

I ordered this dessert because it sounded light and refreshing, and it was, but I had no idea how beautiful it would be. A neat mirepoix (as only the French can do) of local pineapple, mango, and apple, tossed in a very light fresh-vanilla bean syrup, topped with a tart scoop (sorry, I mean canelle, chef) of pineapple sorbet. Add a fresh coconut shell bowl (anchored in a snowy dusting of fresh coconut), a mint leaf garnish and I defy you to find a prettier tropical dessert.

Calling all chile lovers: If ever a dish was born to make you sit up a bit straighter, this is it. I love to tuck into a big plate of vegetables, and Amazing Green Beans is just that - a fiery and vibrant combination of crisp green beans stir-fried with lots of green Thai chiles (in slices admirably as large as the green beans), garlic, fresh basil, and warm spices. You can get the mixture with ground chicken or beef, but I like the fat, chewy cubes of fried tofu. Plan to leave the restaurant with a skip in your step, a song in your heart, and a dragon in your mouth.

Served on a crackly, chewy baguette, this sandwich is rich and satisfying. The roasted pork is moist and flavorful and melds deliciously with the creamy cheese and thin slices of crisp, tart apple. To write about it is to yearn for another!
