Damn, am I glad I showed this review to my family here in Memphis. We all went out last night to Gus's and it is the real deal, and the friend chicken is hot, spicy and delicious. I got one piece white and one piece dark meat, and it was piping hot, cooked to order, and dark golden brown and crispy. This is a red checker tablecloth kinda place, with no frills, no fuss, and serious Southern hospitality. I can't wait to get my photo up!

I was surprised by how tasty these steaming hot rectangles of bread dipped in olive oil and vinegary basil was - granted it was chilly, and steaming bread was immediately perfect. Why don't restaurants warm their bread? I know it's a pain, and sometimes it's truly unnecessary or possibly distracting, but those times are so very rare. When you arrive hungry, and are greeted with fresh, warm bread, don't you relax?

Seriously, Ritual is proving to me that no one gets better beans or roasts them better. This package of Matalapa "La Libertad" comes from El Salvador, where the beans won a blind tasting "Cup of Excellence" award, thus commanding higher prices on the bean market. Ritual ships the fresh beans, vacuum sealed, to the roastery in the Mission, and then roasts them to perfection - NEVER overroasting, which I've now come to be rather snobbish about. The flavor is rich, bold, nutty, and sweet.

These are really awesome as appetizers, the texture is really nice and soft, but not overfried. I love Tam's fish sauce too, and it's a really nice accompaniment to the savory slight sweetness of the yams.

Now these are my kind of onion rings. The battered shell is seriously crispy, and thick - you can find parts of it which are spongy thick, and almost beignet-like in taste and texture. Inside these golden browned little cakes are several layers of onion - not one tiny, worthless greasy strip, but 3+ layers of big, sweet onion. The fact that they're served with ranch dressing is telling, these babies are rich and delicious. Note that they're not on the menu, but don't think you can't order them.
