Sarahb's right on...this crisp calamari appetizer at North is light and bouncy. The addition of the grilled lemons and fresh arugula makes all of the difference - very innovative. Paired with a glass of crisp white wine, who needs to order anything else? Only reason this dish doesn't get a dishola in my book is because the night we tried it, the calamari were slightly overcooked, lending a bit of a chewy texture to the squid. But I would not hesitate to recommend - or order - this dish again!

I'm with Chef Prambs! I love this Hudson's on the Bend signature dish. It's the kind of dish I'd never try to make at home (far too complicated, and time consuming).
The attention to detail is marvelous. I love the silky texture of the roasted garlic red pepper flan next to the crunchy ruby trout, and the shrimp and avocado add a delicious dimension.
If you look closely at the photo, you'll notice a flower, nestled between the trout and the fresh rosemary. Hudson's adds edible flowers to almost all of their dishes. Beautiful and delectable; what's not to like? :)

It's called the fried avocado taco, and yes, it's as decadent as it sounds. In your choice of flour or corn tortilla, Torchy's packs hand battered and fried avocado wedges with vegetarian refried beans, cheddar cheese, lettuce and pico de gallo. The taco comes with a poblano ranch dipping sauce that is to die for. Only word of warning: the deliciousness of this taco declines steeply as it cools. Do not attempt to eat when cold unless you're ready to be sorely disappointed.
