A minor triumph as far as "tapas del mar" go, this ahi tuna is a must-order at Bin 555. It sits in an ocean of emerald spicy basil "olio santo," and is served with grilled roma tomatoes, shallots, chives and sea salt. From a visual standpoint, the sesame-crusted flat-bread appears to guide the plate - a sail in a multi-colored sea. It does more than look spectacular, however. The paper-thin crackers serve as a crunchy textural counterpoint to the soft, sweet tuna.

If you like slow-simmered and marinated pork, this is the dish for you. A traditional Yucatan Peninsula recipe, it involves marinating the pork in acidic citrus juice, then coloring it with annetto seed, and finally wrapping it banana leaf to slow-roast. The result is melt-in-your-mouth delicioso. At Yaxche Mayan Restaurant in Playa del Carmen, the cochinita Pibil is served with piping hot corn tortillas, tangy pickled onions, and a small side of black beans. The dish is incredibly satisfying (a great plate to share). As they say in Mexico - Ricissimo!

These tiger prawns had just the right amount of breading - not too much, not too little. They were perfectly cooked, and the plum Thai chile sauce was a nice accompaniment. An added bonus: a sweet and sour pineapple chutney. The only drawback: we thought 5 prawns for $14.95 was a little steep.

What is better than Carpaccio? ...fresh Colorado beef carpaccio. This quintessentially elegant dish works largely thanks to its simplicity. Slivers of raw Colorado beef are served with a touch of mustard aioli. A quail's egg is the only garnish. Utterly delectable.

"They're like pillows of heaven," my dinner companion said, as she tried one of these bite-sized potato dumplings. She was right. These gnocchi are soft, smooth, and buttery. They make a terrific contrast against the slightly sharp broccolini on which they sit. Shredded Manchego cheese and a roasted tomato pepper sauce tie everything together. Pillows of heaven sound pretty good right now...
